The rain just few days before threatened to make this a different type of year, but it was stopped short as the Rabbit came hopping in to beckon in the Spring Time for the Chinese.

Part of the Happy Charming Restauranteur's resolution for 2011 is living your best life (inspiration from Oprah) and doing this TODAY... and not tomorrow... and waking up early (Jojo Struys is also doing the same in 2011... waking up earlier!)

Do share with us what your 2011 resolutions are, and the first week is a good time to take stock of how things are going and what struggles you are facing to keep them... it takes time to cultivate a new habit and resolution, so we need to spur each other on!

Being responsible for your own health is a great part of living your best life : eating - exercising - having a positive frame of mind are all key elements. Coming closer to nature, eating more fresh foods grown by yourself... Was sipping my Indonesia Sari Wangi coffee brew at Hainan Curry Rice the other day, having an afternoon conversation with my mom... she was recounting the days when a cup of coffee was 15sen.... yup, this was 1960s to 1970s.... a piece of yong tau fu was just 10sen... now both items have increased dramatically to RM1.30 and 80sen respectively.

Do you remember when the prices of items before this rabid inflation set upon us? ok ok... maybe your parents will remember....

Wow, what a year!!!

Every page of news and interest will tell of 2010, the hottest year since a long long time... with all the natural and man-affected happenings which have plagued us, the indominable human spirit thrives to keep us afloat and coming up for a better and better time...

If you've gone through something amazing, unforgettable, bitter, seemingly insurmountable, joyous... this post is dedicated to you! Good on you, and let's keep that spirit alive to share another year ahead in Malaysia. Here's to 2011!

As with all accounts of the year, Hainan Curry Rice would also like to bring you the year that was, our menu highlights and our owner, Jack's dedication to bringing home-cooked, Hainan-inspired food and beverages to all peoples...

Hainan Curry Rice brought to you in 2010 new additions to the menu in the form of chicken/pork chop curry rice, mini pork burgers, special Hainan teh, noodle fare (spicy beehoon, mee Hailam, fried glass noodles, mee Mamak, Yin Yong noodles, Hainan claypot curry noodles), claypot salted fish pork, Hainan claypot assam fish... and the humble popiah...

YES... a humble wrap (drum-roll... this is my tie-in to the title of this post... thank you thank you)... so simple, yet satisfying everytime it is consumed. It is also the choice of dieters who do not have to compromise when enjoying this savory selection as it uses very little oil, and it packed full with crunchy vegetables! The flavor of the popiah is punctuated with the light use of Chinese sausages, fried small French shallots (yes the fragrant kind is known in the culinary world as French shallots, even though it is grown everywhere now), hints of dried shrimp and roasted peanuts... wow! No wonder satisfaction is guaranteed...

Traditional Hainanese Chicken/Pork Chop

Here's something you can try. We currently serve both Chicken and Pork chops in the shop.

Give it a go. All family secrets revealed :) sharing is caring!

Chicken/Pork Chop Traditional Hainanese Style

Ingredients:
1 whole chicken thigh (deboned)/ 1 piece of chicken breast or
1 piece of pork chop meat *ask your butcher - in more sophisticated terms its pork loin / center cut
1 pack of bread crumbs / oats (according to preference)
1 table spoon oyster sauce for marinating, ½ teaspoon for sauce
1 table spoon honey
½ teaspoon thick black sauce
1 egg
2 big onions (cut quarters)
2 potatoes (peeled - 1 for sauce, 1 cut wedged for serving)
2 cup chicken stock (for sauce base)
Green peas (for sauce)
Baked beans (to serve)
Tomato halved (to serve)
Salt, pepper (pinch to taste)

Cooking process:
1. Tenderize and marinate meat
- Use meat hammer or back of cleaver and lightly tenderize the meat
- Clean and dap dry with kitchen towel
- Season meat with oyster sauce, pepper, salt, honey
- Leave for at least 2 hours for flavours to be absorbed

2. Deep frying meat, wedges
- Heat oil for deep frying
- Beat up egg in bowl
- Fully dip meat in the egg
- Coat the chicken meat with bread crumbs all over (or oats for the more health conscious)
- Place meat in heated oil and deep fry till golden brown
- Deep fry potato wedges
- With some excess oil, pan fry halved tomato lightly (for serving)

3. Traditional hainanese sauce
- Boil 1 potato till soft enough, mash up and set aside
- Heat up 2 cups of chicken stock in sauce pan (slow fire to boil)
- Add in onions and allow to slow boil until onions become soft and transparent
- Add in half teaspoon of oyster sauce, sugar and salt, and half teaspoon of black sauce

This day in 2006 (Father's Day), we had our humble opening which all of you were there to witness. 2 years down the road, we are still here thanks to your generous support and willingness to stick with us through thick and thin.

We will continue to strive to serve you Hainan Curry Rice and our extended menu of the highest quality and at prices affordable to everyone. Our commitment has been from day 1 to make Hainan Curry Rice affordable and accessible to everyone, and we have stuck to it through the price increases from the rice shortages and staggering increase in oil prices.

Despite all that has happened, our prices remain relatively unchanged from day 1 and we can safely say that we will continue bringing you the same food at the same quality and importantly the same prices for as long as we can.

You might probably recognise her while driving around Bukit Tinggi, Klang too because she's the face of Yogazone and there's this massive poster of her at the centre close by.

Braised tau-kee mince pork

If you are a Hailam pherng** fan – then you would know tau-kee mince pork.

**Hokkien dialect for Hainan Curry Rice – as it is particularly popular in Klang – where there is a dominant Hokkien community**

This innocent looking dish had to come a long way before appearing on your plates and on this blog! It all starts with the beancurd sheets – these are made from freshly extracted soymilk from ground soy beans. The soymilk boiled, and poured on to large trays to steam and dry as a layer of thin beancurd sheet. This is what you can buy also from local shops specializing in Chinese ingredients and condiments – and what is known as ‘tau-kee’.

The resultant beancurd sheets are then steamed for one hour before used to carefully wrap marinated and spiced minced pork. The beancurd roll is now lightly seared on a hot pan in order to seal in the flavors and maintain its shape for its next journey.

Finally, this ‘tau-kee’ mince pork roll is braised in sauce of numerous herbs and spices for at least another hour. This allows the subtle flavors of the tau-kee and the braising sauce to infuse in to the mince meat, and give you a remarkable taste experience. The beancurd sheet has now also taken on flavors from the mince pork.

What a lot of work for an innocent beancurd roll, you might say… well, that’s the promise of quality, attention to detail, and sincere practice of tradition that you will experience at Restoran Hainan Curry Rice. Try this ‘tau-kee’ pork dish on your next visit here if you haven’t already.

This is as home made, organic and as natural as it gets!

We're also serving up free coconut jelly desserts to finish off your meal. If you didn't also know, Hainan island is famed for it's agriculture activity. Crops like sugar cane, coconut and pineapple flourish in the warm, tropical, and moist monsoonal climate. Since these were abundantly available to the Hainanese people, it's no wonder that these crops feature in some of the tastiest home made foods in our culture. We have rich 'kaya' - that goes on lightly toasted wholemeal bread (available for breakfast through to tea-time) - rich in coconut milk. We also serve refreshing coconut jelly desserts - made from freshly collected coconut water. Hainan Island celebrates a 'Coconut Festival' every year, on the 3rd day of the 3rd lunar month.

Besides coconut, the climate also favors pineapple. A typical Hainanese dish is a mixture of pineapple and deep fried intestines. The pork intestines are cleaned thoroughly, seasoned and fried to a crisp. Then further tossed in a special sauce with chunky pineapple pieces, fresh spring onions and sweet chillies.

What remains to be told is the story of Hainanese people in Malaysia -

The Hainanese people were predominantly working for the British as 'cooks' in their kitchens during our pre-independence days. These British also taught the Hainanese how to prepare curry (they had tasted in India) here in their mansions in Malaya. Of course then, the Hainanese cooks started to prepare a little bit of the same (perhaps slightly modified, and toned down on the spice levels) for their families – and it thus it gained popularity, and perhaps even spawned our own Chinese style curries (as you know – when Chinese families prepare any curry dish, it has influences of both Indian and Malay spice mix, coupled with tweaks to suit the Chinese palette).

You might have heard of 'Scissors Pork Rice' dish before, or 'Scissors Curry Rice', as there are a few of these outlets in Singapore. It is basically of the same origin, as when the Hainanese started to sell this type of food – they had to be fast in cutting the pieces of pork / meat with scissors – to meet the fast pace of demand from customers queuing up! Hence the name of the food/dish became synonymous with how it was prepared.

If you asked what the speciality of this "Hainan Curry Rice' is, I struggle to pin-point some exact dish or description to encapsulate it. However, I believe it is when we taste all of the elements together, it brings in itself a whole gourmet experience to these otherwise normal dishes on their own…lots of curry, with braised meat sauce on rice (this is key to enjoying the meal – which some HCR aficionados have termed – swimming pool, or flood!), with pork, fish, mutton, tofu, vegetables, egg… you have to taste it to believe / enjoy it!

Who would have thought? A humble intermediate shop-lot in Bukit Tinggi Klang could command such a following and drawing in of hundreds-strong crowds.... day in and day out... for the past 8 DAYS!!!

Thus was the opening week of RESTORAN HAINAN CURRY RICE... we did not open with the full fanfare that you see in HK movies (the likes of red firecrackers, lion dance, ribbon cutting, joss-stick wielding owners). Instead, it was a mild rolling back of the shop shutters, silent uttering of hopeful prayers, followed by the respectful unveiling of the inner signage by the two partners...

What followed soon after was enough droning of people swarming into the shop and ordering food and drinks - from opening hour till all the food vaporised before our eyes (usually at 3.30pm).... that was all the warmth and feeling we needed... the adventure has truly begun for the Wongs this time... and the rollercoaster showed no sign of slowing down!!!

May God continue to put this house (Restoran Hainan Curry Rice) in order and send in whirlwinds of customers to sweep across Bukit Tinggi...

FEVER PITCH!!! Soft opening 18 June 2006... come one come all!

Not only in Germany has it reached fever pitch, it's blazing in Klang too... at the Hainan Curry Rice restaurant to be exact. Soft opening (is there such a thing? if it's open, people are going to come - and you would want to make an impression wouldn't you?) planned for 18 June - Father's Day. With our little staff of one Myanmar lady, ad-hoc-semi-skilled-family staff, one great chef... we are opening doors at 9 AM to serve breakfast, followed by lunch - offering the great Hainanese Curry Rice selection!

We could no longer stand to let the masses of people down (the many who peeked in through the half-open shutters to ask about the shop). It is with a sense of pride to know that we're going to allow Klang-ites the pleasure of revisiting their strange fascination, obsession and craving for Hainanese Curry Rice....!

So... with bated breath, and one crazy Saturday ahead of preparations... we will come back with the full fanfare of the great opening day, and a great beginning...

The coffee shop business is in-grained in the blood of the Wong family. Found on the walls of the 'Kelang & Coast Coffee Tea & Restaurant Association' (didnt even know this sort of association existed, am pretty sure they are of non-profit status :D):

The signboard designs have been selected. Its going to be white (restoran) and yellow/gold (hainan curry rice / 海南咖喱饭餐馆) text against a black background.

Drama surrounding the design / creation of the signboard....Daniel had created one which in the end was not required by the Partners as the cost was too high. A clear lack of communication between all parties. Not sure what the normal design charges are but RM600 for a logo and signboard (design only) sounds a bit steep, but we cant really make a call on the pricing as we havent utilised similar services before.

Final total design and production cost c. RM1,500.

...and the journey continues. They found a place selling re-conditioned kitchen 'works' somewhere along Raja Laut. The counters/tops/foodstations/kitchen hardware/software?? were all custom fitted for hotel/restaurant kitchens AND costs about 2/3 cheaper than if we were to buy new equipment off the shelf. Sounds like a pretty good deal when these are apparently better 'finished' equipment made with longer lasting materials. And then there's the headache of how to plan the floor space. It's not just 'lets put the cash counter here, drinks counter there, family tables here, couples tables there,...' although i seriously wished it was that easy. How difficult can it be to plan where to put what, maximising 22'x75' worth of floor space, allowing us to seat the Most number of customers and any given time, whilst Still allowing us the space to manouver around serving 'ever-ready-to-burry-head-in-food' type people, balancing 4 plates of hainanese curry rice on our hands and 6 cups of steaming yummy coffee strapped to our waist. Get the drift. No wonder there's a need for degrees in interior decorating/designing/planning. Hats off to you guys. But its all SUPER exciting. The business thrill and adrenalin this time is REAL. Dad, your vision and drive still amazes me. Although i sometimes think your sub-conscious rambles off ideas faster than your brain can filter, AND you can also change your mind in 10 seconds (much like how you describe some of your friends :D), i thank god that he birthed this idea in you and that we're getting to do this, real time!

SOOOOO many things to do and sort out; drafting of the partnership agreement, renovation plans, furniture, worker permits, menu finalisation etc. Doing business is not easy, never will be. But the rewards are totally different; the satisfaction of seeing your idea birth and germinate. For men, its probably the closet we can get to actually giving birth and raising a child; the birthing of the idea, doing all the prep work, the toil, the sweat, the blood, the hardwork, making sure your 'baby' walks the line and turns out fine. Of course, your first born will always be the hardest because you don't have the experience, you're stepping into uncharted territories, and you wont know when your baby needs to take a dump until he actually has!

As this journey begins, all I can say is that I'm ready. Bring on the hardwork, the sweat, the tears cause I'm wearing my pagoda see-thru apek t-shirt and have my china thongs (slippers lah what you thinking?) on and I'm going to rough it out. I want to see HCR go all the way...

P/s...Dad and Boo went furniture hunting yesterday and saw a couple of tables which interest them...no decisions made yet.

We're all set. We have found our spot (well, sort of) and we're going full swing ahead. Bukit Tinggi, curry chicken, half-boiled eggs (ooo), coffee & toast will never be the same for us again! This is going to be one heck of an adventure for the whole family, dad especially. Maybe this IS the year of being in the marketplace, of breakthroughs, of suddenlies, of pleasant surprises; God I can only ask that your hand be upon our venture.
